Stephen is a Macrobiotic Counselor and Shiatsu practitioner and has been giving wild food walks since 1975 at numerous places on the East Coast. He is an associate at the Twin Ponds Health Center in Breinigsville and teaches classes at various places around the Lehigh Valley and the Poconos.

What dinners are like.

On Friday evening October 2, 2015,  we had potluck dinner at the home of Eileen Lutz in Allentown. Seven people were in attendance. We did have a person from the meetup group who registered but she never showed up. Actually since I started the Lehigh Valley/Pocono Macro Potluck Meetup group last winter not one person has actually come to an event. Jack Hartzell who is a member was there but he and his wife Laurie has been coming to dinners for a long time and doesn’t really need to be in the meetup group. Among the dishes prepared were whole wheat penne with cauliflower sauce, sweet potato soup with white miso, millet patties, steamed broccoli, three bean salad, pressed salad, sauteed winter squash with seitan, and apple pear crisp. Talk centered around previous dinners that I had cooked up in Effort, PA, mediumship, and of course the usual, cats!

Fall 2015 Schedule

Our next dinner is schedule for October 30, a Friday at 6 PM and everyone is invited to bring a a scary story if you know one. It will be at the home of Helen Papathanasiou, 1834 Emerald Dr., Orefield, PA. 18069. Register by calling Steve at 610-756-6867

Please add to your calendars the Thanksgiving Potluck which will be held Saturday November 21 at the Twin Ponds Center for Integrative Health[Breinigisville]at 6 PM. Stuffed Squash turkey, boiled onions with mock chocolate sauce, healthy cranberry sauce, pumpkin pie, tofu cheese ball, millet mashed potatoes with miso gravy are among the dishes we will be having.

I’m planning on three cooking classes for the near future–all at Twin Ponds:

All classes will be $40 and will include eating some samples of the food after the class. register by calling me at 610-756-6867 at least three days before the class.

I have scheduled two lectures at the Shankara Restaurant in Bethlehem for the month of October. Those lectures are free altho I accept donations and there will be some snacks afterwards. Contact me if coming.

No further muscle testing for food quality or info about the re-mothering project. Stay tuned.

At Twin Ponds we are exploring the use of Permaculture principles to guide our decisions for marketing and increasing exposure. I’ll keep you informed.
